Appetizer for 6 persons

Preparation time: 40 minutes

300 gr. eggplant

200 gr. white cheese

200 gr. tomatoes

3 soup spoons olive oil

2 cloves of garlic

Basil, vegetable spice

6 toasted bread slices

Eggplant and cheese sandwiches

Preparation:

Cut cheese on stripes. Souk them into olive oil, basil, chopped garlic and vegetable spice mixture. Leave it for 30 minutes.

Cut eggplant on stripes and fry them.

On every bread slice place eggplant, cheese and tomato stripes.

Use toothpicks if needed.

This appetizer goes well with white wine.
